Recipe: Chocolate Pecan Oatmeal Bake (Gluten & Dairy Free)

Ingredients:

  • 2 cups old-fashioned rolled oats

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • ½ teaspoon sea salt

  • 2 scoops unflavored protein powder

  • 2 cups milk of choice (unsweetened vanilla almond milk recommended)

  • ¼ cup - ⅓ cup maple syrup

  • 1 large egg

  • 1 tablespoon melted coconut oil

  • 1 teaspoon pure vanilla extract

  • 2 ripe bananas, mashed (or ½ cup unsweetened applesauce)

  • 1 cup chopped pecans

  • ½ cup dark chocolate chips

Directions (makes 8-10 servings):

  1. Preheat oven to 375°F and spray an 8×8-inch baking dish with cooking spray.

  2. In a large bowl, mix oats, baking powder, cinnamon, protein powder, and salt.

  3. Add in milk, maple syrup, egg, coconut oil, vanilla, and mashed bananas. Stir to combine.

  4. Fold in chopped pecans and dark chocolate chips.

  5. Pour mixture into prepared baking dish and spread evenly.

  6. Sprinkle additional pecans and dark chocolate chips on top.

  7. Bake for 35-40 minutes, until golden brown. Let cool for a few minutes before serving.

  8. Enjoy warm! Optional: Drizzle with peanut butter or extra maple syrup.
