Recipe: Healthy Pancakes

Ingredients:

  • 1.5 tb peanut butter

  • 1 small-medium banana

  • 1.5 cup gluten free oats

  • 1 tb chia seeds

  • 1 tsp cinnamon

  • .5 tsp pure vanilla extract

  • 1 cup water

  • 2 tb coconut oil

  • Syrup, blueberries, bananas (optional toppers)

Directions (makes x6 pancakes):

  1. Preheat pan on low-medium heat with coconut oil

  2. Mix peanut butter and water using a blender

  3. Add banana, oats, chia seeds, cinnamon, vanilla to blender and blend

  4. Fry on pan and dress with toppings of choice

  5. Enjoy!
